SPANISH TAPAS

JAPANESE (PUB) IZAKAYA

CANTONESE DIM SUM

Seafood is a popular part of Spanish holiday eating.  In this class, you will learn how to choose, prepare and cook fresh squid and mussels.  Along with two side dishes they will make a complete meal. 

Menu:

        • Squid croquetas, aioli
        • Mussels, chorizo crumb
        • Red chicory, toasted almond, anchovy, capers, preserved lemon 
        • Tortilla De Patatas, served with two sauces (Romesco and Mojo Verde)

3.5 hours class for £95pp, with a maximum of 5 guests per class.

In Japan, an izakaya is a casual, traditional bar where alcoholic drinks are served with different affordable snacks and dishes. It is a popular place to head to after work.  In this class, I will show you a few delicious dishes that you can make in a home kitchen, with or without a sake accompaniment!

Menu:

        • Yakitori grilled chicken and leek skewers
        • Okra salad with Goma Dare dressing
        • Pork and cabbage gyozas
        • Vegetable yaki udon

Dim Sum or “yumcha” is a weekend ritual in the Cantonese culture.  I’ll show you a few dishes that you can replicate at home, along with the etiquette and history of this style of eating, and the teas that accompany the meal, next time when you visit a dim sum restaurant you will know what to order.

Menu:

        • Char siu barbecued pork parcels
        • Steamed pork and prawn siu mai
        • Black sesame mochi, ginger and osmanthus syrup
        • Stir fried “Singapore noodles”

ALTERNATIVE COOKING

Studies have found eating 30 plants a week is beneficial for our wellbeing and many of us have started to adopt.  Flavours and textures are key when it comes to vegetarian foods.  In this class, we will harness these two elements to make a satisfying plant rich meal.   This class is suitable for vegans.

Menu:

        • Taiwanese soy and sweet basil tofu
        • Grilled aubergine with miso
        • Korean Kim Bap rice & seaweed rolls
        • Thai style roasted cauliflower and herbs salad

3.5 hours class for £95pp, with a maximum of 5 guests per class.

IMPRESSIVE DESSERTS

Desserts put a sweet and memorable end to a meal.  From petit four, to cold and hot desserts, you will soon learn a few skills to help you create a little sweet indulgence.

Menu:

        • Petit fours baking: Madeleines, Sablés Breton biscuits
        • Coconut panna cotta, fruit salad with lemongrass & lime syrup
        • Strawberry, Pimms & mint Eton Mess (seasonal, May to August only, in place of the panna cotta)
        • Chocolate souffle, blueberry ripple ice cream

BESPOKE MENU

If you would like to cook from a customised menu, I currently offer 4 choices.  We will decide on the flavours and ingredients in advance.  On the day I’ll show you a few know-hows and techniques, guiding you as you cook your dishes, to make your bespoke experience unique.

Menu:

          • Cantonese home cooking, typically 3 dishes, 1 soup, and steamed rice

          • Two types of Chinese dumplings: Cantonese wonton soup, handmade panfried jiaozi and a crispy noodle dish

          • Vegetarian cooking, typically 2 curries, 2 substantial salads and a simple accompaniment, such as fresh relish or mezze style dishes

          • Three courses French cooking for beginners, covering essential skills such as knife skills, dressing and sauce making and quick breadmaking. An appetizer (soup or a cold entree), followed by a complete main course (vegetarian or standard) and lastly, a simple dessert

4 hours class, £300 for two, thereafter £95pp, with a maximum of 5 guests per class.  If travelling to your home for the booking, additional costs apply.
